Product description

A Schiava Rosé IGT BIO reserve from 2002, the evolution of perfumes and aromas for those who love intense flavors and aromas.

Position:
Hills in the municipality of Tenno near Riva north of Lake Garda.
Conferred vineyard surface:
Location Doss: wine made with grapes from organic farming in application of reg. EEC 2092/91 WITH THE N.IT ICA A 302 T 050062.
Soil, altitude, exposure:
Hills of morainic nature 400 m a.s.l.exposure of the vineyards south-east Clayey soils mixed with gravel.
Breeding system:
Half Trentino pergola.
Grapes: Slave 100%
Yield / ha: 90 q./Ha, 65 hl./Ha.
Conduction and harvest period: manual in 10 kg crates. third decade of September.
Vinification: In pink, after technical washing of the grapes, transfer of the whole berries in a horizontal wine-maker for the color taking. Subsequently, soft pressing with the 0,8 bar KWT press and continuation of fermentation in the absence of the peel at controlled temperature.
This rosé slave has unique characteristics especially in the vinification in pink. We have chosen to keep part of the lot as a "reserve" to appreciate its evolution over time. It is a proof of wine conservation in the absence of oxygen, without any type of additive. An almost aromatic bouquet and a velvety taste are the result of an evolution of almost 10 years. A wine for fans of great flavors.

Pairings
Tasting temperature 18 °: Ideal with sweet cheeses, soups, mixed cold cuts, roasted chicken or mixed boiled meats. At cooler temperatures it also finds a good response with fish dishes.

Tips from the manufacturer
The wines obtained with our production technique are the product of the fermentation of grape juice without the addition of any additives and no manipulation that can alter the natural development of the natural process of the wine.
The goal is to allow the wine to independently reach a natural stability and maturation.
The wine presents itself for what nature gives without any type of intervention, the sensations of the bouquet and flavors are characterized by their wild fragrance and sincerity.
This is due to various factors: the lack of copper residues, the absolute absence of sulphites, and not least the lack of heavy metals, "normally" present in all wines where the grapes have not been previously washed.
This is also why wine actually leaves the evaluation parameters normally used by "sommelier" professionals.

Any deposit that can be observed on the bottom of the bottle does not preclude the authenticity of the wine, rather it testifies to its natural stability.

For an optimal tasting, I recommend airing for a few hours, the product is kept without the presence of "reduced" oxygen, for this reason it needs to "breathe" to enhance all its characteristics.
